Keto Parmesan Bread Bites Ingredients
- 2 cups almond flour
- 1/2 cup unflavored low carb protein powder
- 2 1/2 teaspoons baking powder
- 2 teaspoons xanthan gum
- 1 teaspoon salt
- 1 egg
- 1/2 cup shredded mozzarella cheese, melted
- 1/2 cup unsalted butter, melted
- 2 tablespoons sour cream
- 1 egg white

- 1/4 cup unsalted butter, melted
- 1/3 cup grated parmesan cheese
Keto Parmesan Bread Puffs Directions

Preheat oven
Preheat oven to 350 degrees.

Mix dry ingredients
Add almond flour, protein powder, baking powder, xanthan gum and salt to a food processor. Pulse to combine. NOTE: Can use an electric mixer or blender to mix up the dough. A food processor is the easiest.

Pulse in wet ingredients
Add egg, melted cheese, butter and sour cream. Pulse until a dough forms. NOTE: You can melt the cheese in the microwave for 60 seconds or in a non-stick skillet on the stove top.

Roll into balls
Pinch off dough and roll into a ball about an 1 inch diameter. Place on a parchment lined baking tray. Space balls around 1 to 1 ½ inches apart. Brush each ball with egg white wash.

Bake
Bake at 350 degrees for 6-8 minutes on the middle rack of the oven. Move rack high and broil on high for 90 seconds or until the tops of the puffs turn golden brown. Remove from the oven.

Butter and parm topping
Once cool enough to handle, brush one puff with melted butter. Then roll in grated parmesan cheese. Repeat with remaining puffs.

Yes, for one roll. It’s about half the size of a standard roll.
EXCELLENT – made within minutes of seeing this recipe this afternoon. I served an Italian style dinner of simmered pork butt with fresh tomatoes from the garden and a salad with my homemade mozzarella, evoo & a fig balsamic vinegar dressing topped with my garden basil leaves. The rolls rounded out our tasty dinner !

I haven’t tried this recipe without the protein powder. I thinking maybe coconut flour could be used as a substitute but the puffs might be denser.
The protein powder helps to make baked goods fluffy and less dense when using almond flour. It kind of acts as a replacement for the gluten that wheat flours have. Without it, most keto baked goods are very dense and crumbly.
Could egg white protein powder work instead of whey protein powder? I make this switch in several recipes since I can’t tolerate whey, so I was wondering if would work as well in this recipe.
And cream cheese instead of sour cream, maybe just tinned a bit with almond milk or heavy cream to resamble the same consistence?
I haven’t tried that, but it would probably work. And yes, cream cheese would probably work as a substitute too.

Can you make the dough and freeze them and then cook them as wanted?
Yes! You can freeze before cooked or after baked.
I made a batch today, it was so easy and they taste amazing. They make 18, but I only baked 12. With the other six I am going to make stuffed puffs using a cooked meatball in the center and then baking and dipping in melted garlic butter and Parmesan cheese and serving with marinara sauce. Thank you for this wonderful recipe. I will be experimenting with it as I can see where you can use this dough as a base for glazed donut holes, altering the recipe with a flavored protein powder and adding some sweetener and flavorings.

Thought I might roll them out lengthwise to make a breadstick – kind of like the ones at Olive Garden. I’m guessing it will need more dough per breadstick so the carb count will change, but it seems like a fun idea.
Absolutely delicious! Made a double batch and froze half. Should they be thawed before cooking or can they be cooked frozen?
You can probably do either. If you bake the bread from frozen, it will obviously take longer to bake.

I’ve been keto all of 2020. Fell off the wagon for most of 2021. We are back on gain for better health and feeling better. I’ve tried many keto breads and wasn’t expecting much different from these. We tried them with bbq chicken and cauliflour Mac. They are so good. Easy to make and taste delicious. My husband claims even non keto people will love these. Can you use vital wheat gluten instead of the protein powder since its meant to imitate the gluten effect? Like someone else said, I too have 2 giants canisters of flavored protein and don’t really want to buy another.

These came out dense like play doh. What type of protein powder do you recommend. It seems like that might matter, even though the recipe doesn’t specify. Are they supposed to puff, as the name implies? I was imagining something a little airy. These were kind of a bust.
I used Isopure Zero Carb Unflavored protein powder. They aren’t supposed to be dense. More like a roll texture.
I’ve tried dozens of online recipes and this is the first time I’ve ever left a review because these are just. so. good. They taste like Red Lobster’s cheesy biscuits, but saltier and more flavorful. My husband and I are dumbstruck that these are low carb and we’ll be making these regularly from now on. Thank you!

Can I replace the almond flour with lupin flour or coconut flour? We can’t have almonds but these look amazing!
I haven’t tried those as substitutes in this recipe. But lupin flour would be half the amount and coconut flour…use 1/4 to 1/3 the amount.
